The products
A rusk is baked twice. The first pass makes a loaf, the loaf rests for several hours so the crumb firms up, then the slices go back into a long low bake that drives out the remaining moisture. Toast is browned bread. A rusk is a dried, restructured product, which is why it keeps for months and holds its shape in hot chai.
Wheat flour, full cream milk, yeast and time, with every ingredient listed plainly on the pack. No bromate, no added colour and no trans fat anywhere in the range.
Yes. Every product carries the green vegetarian mark. The rusk range and Melt Loaf contain dairy. Toastie Loaf is the only line made without milk.
No bromate, no added colour and no trans fat, anywhere in the range. We use a small amount of refined vegetable fat in the rusk dough and we list the source on every pack.
Freshness and storage
Three days at its best and excellent toasted for two more. There are no softeners or emulsifier blends in it to stretch that. Keep it cool and dry, and out of the fridge, which stales bread faster than a counter does.
Fold the pack over and clip it, or move it to an airtight jar. Rusk goes soft by absorbing moisture from the air, not by ageing. In a humid monsoon week an open pack left loose will lose its snap within two days.
Because that is the number that matters. Every pack carries the date the batch came out of the oven and the best before date alongside it. A product baked on Tuesday and packed on Thursday is two days older than the label would otherwise suggest.
Send us a photo of the pack with the batch code and we will replace it and trace the batch. Softness almost always means a seal failure rather than a bake problem, and we want to know which line and which shift it came from.
